No idea for tea time ?
Well, I have the best recipe for it, directly baked from Devon’s Aga : The Scones !!!
For those who don’t know yet, go in your kitchen and cook it now. You will experience the best cream tea in the whole universe ever ! And for those who think they know what is an English Scones try it there, it has nothing to do with what you have already tested.
I was lucky enough to meet the best host at Garfield House in South Brent in the edge of Dartmoor in England. Its specificity ? They are no sugar and eggs unlike his London cousin. This makes them lighter and less stuffy.

If you can’t get Clotted Cream easily, you can replace it with butter or thick cream.
What is Clotted Cream?
To scared you, I’ll tell you it’s the fat of the fat from butter. But in reality it’s a thick cream made by indirectly heating full-cream cow’s milk using steam or a water bath and then leaving it in shallow pans to cool slowly. During this time, the cream content rises to the surface and forms “clots” or “clouts”. When you buy clotted cream there are always two separate layers. The crust is more yellow and hard and the cream underneath, whiter and creamier.
At the time of serving it is always better to mix the two parts before proposing to the tasting.
This cream has its origins in the counties of south-west England: Cornwall and Devon.
The Clotted Cream and Strawberry Jam Polemic
We know England for his particularly picky and grinning humour. What a better way to find it at Cream Tea Time ?
Everyone is well settled in his little puffy armchair in the living room, the boiling teapot ready to be drink, the smell of scones who tickles your nostrils, the knife ready to slice the scone in half and there, you are stopped on your way to spread clotted cream on your scone. What are you doing here, dear ? said your neighbor. Don’t you know that you have to start with strawberry jam? Oh imputend ! And you to fight back, but, my dear, it’s much more better if we start with the clotted cream!
This debate is endless and leads to countless explanations to justify whome to clotted cream or strawberry jam have the priority to inaugurate his presence the scone freshly cut in half and waiting to be tasted.
It became an English Joke.
But let’s not forget that the most important thing is that you enjoy your Cream Tea.
Personally my preference goes for clotted cream first, followed by strawberry jam.
